As automation transforms the food and beverage industry, a critical question emerges: Do robots cheapen the customer experience?
While back-of-house automation is common, brands lack clear data on how visible robotic service impacts the perceived value of premium, artisanal products.
To measure the real-world impact of customer-facing automation, we designed and launched "Buttered Byte", a pop-up croissant bakery. Through a rigorous in-the-wild experiment (N = 324), we tested how different variables influenced customer perceptions of food quality, service, and brand value.
We manipulated three key elements:
The Server: Robot versus Human.
The Environment: Server working alone versus working alongside a visible human baker.
The Product: Artisanal croissants versus mass-manufactured croissants.
Our research revealed that the success of robotic adoption hinges entirely on context and product quality:
Human-Robot Synergy Drives Premium Pricing: Customers were willing to pay significantly more (a $0.38 CAD premium) for the exact same product when a human baker and a server were both visually present - even when that server was a robot.
Artisanal Quality Survives Automation: Using a robot to serve a product does not negatively affect the customer's perception of an artisanal good.
Mass-Production is Penalized: Conversely, having a robot serve a mass-manufactured product actively diminishes the product's perceived value.
Successful automation isn't about replacing the human element; it's about elevating it. Our findings prove that when a robot server is visually framed as working with or for a human person, it successfully counters the negative stereotypes of robotic service. By strategically deploying robots to support human craftsmanship, retail brands can modernize their operations while fully retaining - and even boosting - their premium product perception.
